Weekend In Review: 4.13 & 4.14

Good afternoon!  I hope that you had a wonderful weekend.

Although Pa was on-call this weekend, we still had a great couple of days at home.

We celebrated Friday night by making a homemade pizza.

It was so good.  We use this crust recipe and bake it on a stone.130415 004For years, we tried to make a half-whole wheat pizza crust and there is truly no comparison to this one.

We were thrilled to run Saturday morning (sarcasm), but one thing I know about myself is that I almost always feel better once I get out of the house and start moving.  I had a few bouts of nausea before the run and even hustled to the bathroom once, but nothing came up.  Guess what made me feel better?  Running.

I decided to coddle myself with a bowl of honey nut cheerios and berries post-run, rather than my usual green smoothie.  It was so good.130415 007

Lula didn’t take a nap Saturday–she played in her crib instead–so we knew we needed some outdoor time to distract her.

The lovely chickweed was back in the garden, even after Pa’s efforts last weekend.130415 011

He tilled it again while I dug dirt out of our compost bin.130414 PS 002

I discovered a lot of rich soil that we then sprinkled over the garden.  Lula was very helpful in this process.130414 PS 006

I can’t say enough about how fun it is to watch her occupy herself when we are outside.

130415 024Once we finished up our tasks, Pa mowed and I shot a few amateur nature photos.

At this point in the afternoon my stomach was as hard as a rock so I brought Lula back inside and sat down as soon as possible.

Pa and I enjoyed burgers while we watched this documentary.  It was creepy, sad, and disturbing.  I would recommend it if you enjoy watching shows like Dateline and 48 Hours. However, like many episodes we have watched lately, the ending of this documentary did not give us the closure we were looking for.

Sunday morning Lula was chattering at 6:45 and by 8 we were back outside for a 5 miler.130414 PS 017

I took a few walking breaks along the way and felt pretty good, even after such an active Saturday.

Once everyone was cleaned up,

we decided to see if the local greenhouse was open and purchase some plants.

the owner recommended not buying plants yet since it was so windy out and the forecast this week is chilly.  We thought that was sage advice and headed home.

Of course, Lula slept on the 7 minute drive home so once again, a nap didn’t happen.130415 042

After lunch, we convinced ourselves to go back outside and do some more yard work.  The garden looks great…130415 037…although close-up there is still knot weed everywhere.  Does anyone have advice for how to eradicate this stuff?130414 PS 026

We planted spinach, kale, and romaine lettuce seeds in the garden and planted phlox and pansy seeds in the wildflower container we keep on our deck.130414 PS 038The leftover onions I kept from last year were completely dried out, but not to worry, Lula found a good use for them.

Last but not least, we planted our wildflower patch.

130414 PS 040130414 PS 042As I was watering it, Lula discovered the fun of walking through the running hose.130414 PS 047Once again, my stomach was starting to make me extremely uncomfortable so it was time to head inside.  We had a relaxing evening and Pa and I felt ready to start the week after a good night’s sleep.

Weekend In Review: 3.23 & 3.24

Monday, again?

Here’s what we were up to this past weekend.

Friday, Lula and I spent a large chunk of the day making sugar cookies for Pa.130325 004

Ever since I made these for him on Valentine’s Day, he is obsessed with them and often jokingly tells me he is going to have them for dessert, even though I haven’t made any.  What a comedian.

We were home all day and the temperatures were chilly…a perfect afternoon to spend making them again.  I tried to go with Eastery colors this time.

Yes, Lula is trying desperately to snatch one.  He was quite pleased when he got home from work that evening.

Saturday we were up bright and early and were able to get in another 6 mile run.  It was chilly and gloomy, but I was glad we got out there.

We had a birthday party for Jake’s uncle to attend so as soon as I was cleaned up, I got to baking a cake for the festivities.130325 025

By the way, I got this little “broom” for my birthday and it is wonderful.130325 022Basically, you use one of the pieces of straw in lieu of a toothpick when testing a cake to see if it’s finished baking.  It does much less damage to cakes…and it’s cute.  Here’s a link to another one I found, if you are interested.

After some errands, we made our way to the birthday “boy’s” house and here’s what it looked like when we arrived.130324 PS 006

More snow!  I love the juxtaposition of the daffodils and the falling snow.  It was so pretty and cozy to watch the snow fall while we sat inside and chatted.

It was almost 6 PM by this time and the snow was still falling so we decided to make our way home.  After chasing cats and experiencing a sugar high, poor Lula couldn’t stay awake for the drive, although Pa tried to entertain her.130324 PS 024

We got home, Lula found her way to sleep, and Pa and I watched a little TV.  As usual, we were too wiped out to stay up too late.

When we got up on Sunday morning, this is what we saw.130325 026

Yes, another 5+ inches fell overnight.

It was a windy, coooooold morning.

130325 032We knew a stroller run was impossible and although the winds were harsh, we decided to try another round of snowshoeing to see if Lula would tolerate it.

Once we made our way into the forest, it was sheltered from the wind and quite pleasant.

Talk about a winter wonderland.

The snow was much less packed this time, which offered a better workout in a sense, since we were plodding through it.

And after some shovelling and KU basketball watching, it was suddenly Lula’s bedtime and Pa and I were ready for some serious relaxing to gear up for the week.

At times it felt like we didn’t stop moving this weekend but it sure made for some wonderful memories.

Whole Wheat Cheese Crackers

Good morning!

I hope this day is off to a good start for you!  Lula and Pa have been under the weather–I think they acquired whatever I had last week–so I am hoping they start feeling better soon.  Here’s my favorite “get well soon” video- always makes me smile.

I haven’t done many baking posts lately.  Although this recipe isn’t mine, it is one that I am excited to share with you today.

I get a lot of pregnancy cravings.  Most of them are fleeting, as in I buy a box or two of something I am craving, and am sick of said item before I’ve finished the contents.

One pregnancy craving that I haven’t tired of?  Reduced-Fat Cheez-Its.  I love the way they taste and I love how crunchy they are.  However, I don’t like the ingredient list and I really don’t like that there is little to no nutritional benefit in eating them.

I decided to see if I could find a recipe for a homemade cracker that would be similar, fun to make, and hopefully healthier.

This is the recipe I used.  It contains 5 ingredients (I used whole wheat flour and skipped the pepper).  Sadly, my crackers did not have the brilliant orange hue shown in Ellie’s photos, but they still tasted delicious.

A few things I wanted to mention.

1.  Using a food processor to make dough is amazing- who knew it could be so easy?photo 2

2.  I had to really go easy on my food processor in the last thirty seconds or so of pulsing the ingredients.  I ended up molding a few of the lumps together into a ball with my hands instead of killing my buddy.

3.  I let it refrigerate overnight and this was the color of the ball the next day when I was ready for rolling.130209 PS 026The outside of the ball had turned a grayish-brown color–kind of scary–but the inside was still the cheddar color from the previous day.  Once I rolled it out, the ugly color was pretty much gone.

4.  I used the warmth of my hands to help work the dough a bit- otherwise it would have been far too stiff to roll out immediately.

All I had was a rolling pin, a pizza cutter and a ruler so I did my best to make straight edges (I’ve never been good at that).

These crackers were thick and puffy and really tasty, especially right out of the oven.  Lula and I both loved them and I ate way too many!

130209 PS 030I wouldn’t say they were exactly like Cheez-Its or Goldfish–which was what Ellie was shooting for–but they were a really tasty, homemade, whole wheat cheddar cracker that I thoroughly enjoyed.

I will definitely be making these again!

Munchkin Meals: Full Day Edition

Welcome and thank you for stopping by!  It’s been awhile since I’ve “linked up”. Thanks, as always, to Brittany.  I am looking forward to seeing what other mamas are feeding their young ‘uns.

Breakfast:

oat cereal (half iron-fortified mixed with half regular oats) + spinach, orange juice, yogurt, mixed berry smoothie

Lula always polishes off breakfast and dinner.  Lunchtime is frequently hit or miss.  Some days she can’t get enough food, other days she has little interest in what is in front of her.  Unless it is candy or cookies, of course!

Edited to add: Lula probably drinks between 20-24 oz of whole milk per day.  Additionally, she is still nursing three times a day but since I’m closing in on 5 months of pregnancy, I don’t think she is getting much.

Chili or Soup?

Good Tuesday!  I hope that your week is off to a great start!

Today, I thought I would post a quick recipe that has made lunches for both me and Lula easier lately.

Lula is getting to the point where she occasionally tires of straight veggies and needs some kind of excitement to make them worth eating.photo 2

Her pregnant mama had been craving chili lately, so I decided to concoct something in the hopes that we would both enjoy it, as well as fulfill our veggie requirements at lunchtime.

Enter Taco Chili or Soup…let’s call it Shili.photo 1 (1)

Taco Shili

As this was made for my 16 month old, dicing everything as small as possible was important to me.

2 large green peppers

1 large carrot

1 large yellow onion

1 lb. lean ground beef/turkey/chicken or omit

2 16 oz cans tomato sauce/puree

taco seasoning to taste

2 servings veggie/chicken/beef bullion

2 cups water

1 bag frozen corn

1 can black beans (or use an additional can of beans of your choice if  vegetarian)

Instructions:

+Finely dice green pepper

+Grate carrot

+Finely dice onion

I cut my onion into quarters and use the food processor to dice it–no large chunks and no crying

+Cook meat with onion and drain thoroughly when meat is no longer pink–set aside

+Place peppers and carrot into a large dutch oven, add tomato puree, seasoning, bullion, water, and mix

+Bring mixture to a boil

+Add burger, beans and corn

+Turn heat to medium-low

+Let shili simmer for 30-60 minutes

+Turn heat off and let shili flavors meld together for ten minutes or so before serving

This was a pretty easy concoction to throw together.  It tasted sweeter than I expected, perhaps the corn and carrot combination?  I think I will use chili seasoning next time to see if that makes it a little more savory.

The good news?  None of these measurements or cooking times need to be exact…eyeballing things is good enough with this recipe.

The even better news?  Lunch took about 5 minutes to reheat.130205 051

Our spring weather was certainly short-lived as it is currently 5 degrees here.  Brrrrrr.

A couple of random bits of information on this Friday.

One, I apologize if some of the pictures in my last post were showing up somewhat wonky.  They were okay in Chrome and Firefox but other browsers showed them as sideways or upside down.  Working on that now.

Two, it’s February 1st!  Valentine’s Day is just around the corner and so is spring…I think.

Three, Dreena Burton’s maple banana bread I made and blogged about having a strange aftertaste?

I’m thinking it was just my pregnancy taste buds…once I slathered one slice with pb and the other with butter,  I had no problem eating it.

I hope that your Friday is off to a great start!

We have been hunkering down here since it was so chilly yesterday–okay, it was 26 degrees–but I am pretty wimpy after living in Kansas for almost 8 years.

I made this maple banana bread yesterday.photo 3 (1)I’m not 100% sold.  I was trying to find something sweet but also healthy for a post-lunch snack as my sweet tooth has kicked into high gear in the last 15 weeks, but I’m not sure that this is going to cut it.  The bread has a strange aftertaste.  Admittedly, I used skim milk rather than non-dairy, so the fault is likely on my end as Dreena’s recipes have never disappointed before.

Moving on, Lula and I went to Target yesterday and I found a few maternity tops!

A lot of Target’s winter gear is on clearance.  I found three tops for about $28, I had a gift card for $25, so I was quite pleased.  Lula was too.photo 5 (1)

That is about it from here.  We don’t have plans for the weekend other than running and being lazy.photo 1

…while the merry bells keep ringing…

I love Christmas music- we’ve got a Roku which plays Pandora on the TV so on days like today,

snow and blustery winds

when Lula and I aren’t planning on going anywhere, the Pandora Christmas station rules.  From Mariah Carey to the Grinch to Charlie Brown, there is some good stuff on there.

This snowfall is the most we have gotten since the winter of 2010-2011 so I am pleased.  Just last week, this is what we were up to around here.I believe it got into the high 50s on that day- not bad!

I’ve been doing a lot of baking and assembling of tins.

My siblings and I used to make sugar cookies for our grandparents when we were kids and over the years, the sugar cookies have evolved into me making tins of all kinds of treats for many of my relatives.  I really enjoy doing it and (I think) most people enjoy eating sweets so it all works out.  I don’t try to do low-fat anything for Christmas- it’s real ingredients, real butter, real sugar, etc. for these goodies.

Quick Lula update- she has been taking a few steps at a time, on her own, for the last few days!  So proud of her. It’s amazing to me how well she entertains herself these days.

She struggles with getting herself to sleep for her naps so I’ve stalled them a little.  I end up putting her in her crib around 11:30 and usually by 12 or 12:15, she is sleeping.  I’ve been getting her up at 1:40 or so because I’m afraid that much beyond that and she won’t be able to go to bed at night but I’m going to see if that’s necessary once the craze of the holidays is over.

A Runmarun tradition is to head to the Plaza in KC around Christmas and do some window shopping before going out to eat.  This year was no exception and we had a great time.

The plaza is a pretty festive place and we love all the lights and decorations.  I can’t believe that some day Lula will be walking around on her own when we go there, demanding to go in particular stores, etc.I know I haven’t been around much and once the holidays are over, I hope to be back here more frequently.  I won’t be posting over the holiday break as the family get-togethers begin, so from our family to yours, have a Merry Christmas!

 

Semi-Healthy Peanut Buttery & Dark Chocolate Brownies

Hey folks!  Happy Tuesday!  We are playing catch up from a busy weekend away that I’m looking forward to posting about soon.  In the meanwhile, I’ve got a recipe involving chocolate and baking since fall is on the way which means my oven will be getting a whole lot more use!

My go-to brownies are this kind from Betty Crocker.  When I was pregnant, these were fantastic when many of my typical treats sounded disgusting.  My only complaint?  I like middle pieces- no edges please!  When is someone going to invent a baking dish that does that?  :)

However, when I want something a little healthier, the recipe below has served me well for the past five or six years.  I used to make these as a dessert when I was teaching but somewhere along the way, I forgot they existed.  I’m so glad I rediscovered them.

They are based on this recipe by Liz Applegate and I have made some tweaks.  I’m offering two recipes here- one with flax seeds and one with wheat germ.

Semi-Healthy Peanut Buttery Brownies with Flax Seeds only ’cause I was out of wheat germ so tried to experiment

3 ounces semisweet chocolate chips

3 ounces Reese’s Pieces

3 tablespoons butter

1/2 cup peanut butter

3/4 cup quick-cooking oats

1/3 cup peanut flour

1/3 cup ground flax seed

1/2 teaspoon baking powder

4 egg whites

1/2 cup brown sugar

1 teaspoon vanilla

handful of Reese’s Pieces

+Pre-heat oven to 350 degrees

+On stove top, melt chocolate, Reese’s Pieces, peanut butter, and butterI was ready to stop here and just eat this concoction

+Once melted, turn off heat

+Measure dry goods into a bowl and whisk together (oats, flour, flax seed and baking powder)

+Measure sugar, vanilla and 4 egg whites into another bowl and whisk together- these get thick quickly which is what you are looking for

+Slowly fold together chocolate-butter-pb concoction into egg whites-vanilla-sugarthought this would be a pretty smooth pour to capture- it ended up looking chunky and hideous

+Add dry goods to wet, gently stir everything together

+Add more Reese’s Pieces to the batter if you are obsessed with them

+Spray a 8X8 or 9X9 pan with cooking spray

+Pour in batter and even it out+Bake 25 minutes+Cut when you are readyThe flax seed version was definitely more cake-like and less fudgy.  I enjoyed them but fudgy brownies are where it’s at.  Of the two recipes, I definitely like the wheat germ ones better.

Semi-Healthy Dark Chocolate Brownies with wheat germ

6 ounces dark chocolate chips

3 tablespoons butter

1/2 cup peanut butter

3/4 cup quick-cooking oats

1/3 cup peanut flour

1/3 cup toasted wheat germ

1/2 teaspoon baking powder

4 egg whites

1/2 cup brown sugar

1 teaspoon vanilla

handful dark chocolate chips

Follow the instructions on the flax seed brownie recipe above, just be sure to sub dark chocolate chips and wheat germ!

Munchkin Meals: Lunch with Lula!

I feel like I need to confess something.  When I click on other momma’s blogs for the munchkin meal posts, I feel a little embarrassed that I am even contributing, based on my lack of creativity.

That said, I am becoming more motivated in the kitchen to impress readers offer something a little more exciting for Lula’s lunch! ;)

Introducing…

Sweet Potato Black Bean Zucchini Pancakes

These are truly simple but a word of warning.  They are EXTREMELY MESSY!

 I often give one of these to Lula as an “appetizer”, let her make a huge mess, wipe her and the high chair off, and then give her the other components of her meal.

Ingredients:

one medium sweet potato

one cup of grated zucchini

one can of black beans

3/4-1 cup oatmeal cereal

Instructions:

*steam sweet potato into chunks

*mash or puree sweet potato, beans and zucchini together

*stir in cereal

pa was frightened of this goo

*spray skillet with cooking spray, or sub oil or butter

*turn skillet on medium-low heat

*Using an ice cream scoop, place “dough” into skillet*flatten

*let sit 3-4 minutes, checking often

*flip

*let sit 3-4 minutes, checking often

*remove from heat and let pancakes “rest” until completely cool

*yields about 15 pancakes

I found these to be pretty wet to work with, especially when flipping them.  As Lula is just beginning to feed herself, I am fine with a pretty mushy pancake going into her fist and her mouth.  I pureed my ingredients but mashing everything together may result in a firmer pancake.  Additionally, using oats instead of finely milled oat cereal may also help firm up the patty.

I was pretty pleased with these, mainly because they are not too challenging to make, and one pancake includes carbohydrates, protein and veggies!

I discovered that a full body bib worked extremely well to keep Lula from getting too messy, even if she does resemble a linebacker.

This discovery came only after we used a regular bib first! :)

Other lunches include some kind of fruit and some kind of vegetable.  Lula has gotten pretty good at picking things up “pincer” style and it’s really fun to watch her eat.
