I feel like I need to confess something. When I click on other momma’s blogs for the munchkin meal posts, I feel a little embarrassed that I am even contributing, based on my lack of creativity.
That said, I am becoming more motivated in the kitchen to impress readers offer something a little more exciting for Lula’s lunch!

Introducing…
Sweet Potato Black Bean Zucchini Pancakes
These are truly simple but a word of warning. They are EXTREMELY MESSY!
I often give one of these to Lula as an “appetizer”, let her make a huge mess, wipe her and the high chair off, and then give her the other components of her meal.
Ingredients:
one medium sweet potato
one cup of grated zucchini
one can of black beans
3/4-1 cup oatmeal cereal
Instructions:
*steam sweet potato into chunks
*mash or puree sweet potato, beans and zucchini together
*stir in cereal
*spray skillet with cooking spray, or sub oil or butter
*turn skillet on medium-low heat
*Using an ice cream scoop, place “dough” into skillet
*flatten
*let sit 3-4 minutes, checking often
*flip
*let sit 3-4 minutes, checking often
*remove from heat and let pancakes “rest” until completely cool
I found these to be pretty wet to work with, especially when flipping them. As Lula is just beginning to feed herself, I am fine with a pretty mushy pancake going into her fist and her mouth. I pureed my ingredients but mashing everything together may result in a firmer pancake. Additionally, using oats instead of finely milled oat cereal may also help firm up the patty.
I was pretty pleased with these, mainly because they are not too challenging to make, and one pancake includes carbohydrates, protein and veggies!
I discovered that a full body bib worked extremely well to keep Lula from getting too messy, even if she does resemble a linebacker.
This discovery came only after we used a regular bib first!
Other lunches include some kind of fruit and some kind of vegetable. Lula has gotten pretty good at picking things up “pincer” style and it’s really fun to watch her eat.

I just introduced beans to L a week and a half ago and she loved them and since they are so mushy already, it made it really easy on mommy to let her sample them. We got the bibs at Ikea for a super-cheap price.
Looks great! Forgive me for going a little tangential here while we’re talking baby food:
I think I might be developing a (minor) mental problem cutting up food for our 8 month old. I do it. Then I look. Then I imagine him choking. So I cut all those pieces in half. Then I look. Then I imagine him choking because he eats by slamming his fist on the high chair in a flash of fury, grabbing about five pieces, and shoving them in his mouth as quickly as possible like they’re banana flavored Heroin puffs and he’s needing a fix.
So I cut them all in half again. And again.
Pretty soon it’s a mathematical exercise in exploring the meaning of infinity. Until they’re all just mush. And it defeats the purpose of giving him solid food.
So there you go.
Hahaha! I feel the same way- in fact, in the photo of the broccoli and cherries, I ended up cutting some of those pieces smaller ’cause I was worried about the same thing! Your guy does not mess around with food! From someone who worries about the same thing, it’s definitely a minor mental problem!
He obviously inherited my appetite and his mother’s patience. Devastating culinary combo.

Thanks Sarah- I will admit that I liked them too and ate a few while they were cooling off! They tasted almost fruity at times…I might be crazy!
I took photos with two cameras- we have a Canon EOS 7D which was a very generous baby shower gift from our uncle and also a Canon PowerShot SX210 IS which I think works very well for being a fraction of the price of the other camera!
Love the full-body bib, but hate cleaning it!! I decided on “messy food days” to just let the little one eat in only a diaper, then go straight outside after lunch for some sort of “water play”. Insta-bath.
Ha! We just throw it in the washer but an insta-bath sounds even better! On these hot summer days, just a diaper for mealtime works well and who wouldn’t want to get into a pool to clean up and cool off! Thanks for the idea, I am definitely going to have to do that!
I need to start documenting what T eats – hopefully it will force me to be a bit more creative! I usually just hand him some beans and veggies and call it a day. I’ll have to try those pancakes, he’d probably love them! But then again, he loves everything…
